Celebrity chef Ritu Dalmia was in the city recently for a LuxeDrive event. City Express spoke to the Order of the Star of Italian Solidarity Award winner on Italian cuisine, her journey and plans to start a restaurant in Bengaluru.
What is the best thing about Italian cuisine? What are your favourite dishes?
The cuisine is all about good, fresh ingredients, more than technique. So for me, it is a true celebration of good produce. There are way too many favourites to list, but a plate of silky ravioli with butter sage and a well made torta della nonna definitely hits the spot.
Any memorable moment in Italy while exploring the cuisine?
Every trip has created some amazing memories. The first time I was in Sicily, I made cheese with the cheese maker, saw the birth of a calf and went to convents to taste marzipan. That trip was a very special one.
Is the Italian food available in India improvised to suit our taste?
